The inspiration for this restaurant comes direct form my
grandmother, Marguerite, who inaugurated her restaurant in 1915 in
St. Rйmy de Provenзe. It was called Le Cafй de l'Epicerie ("the cafй
grocery"). She was noted for her excellent cuisine and people made
"le dйtour" (as the Guide Michelin says, when restaurants are
worthy of changing one's direction for) most willingly to taste her
spйcialtйs. Some of these recipes come from her creations. Though
her restaurant had closed long ago, I grew up imbibing her signature
dishes.
I call the restaurant "'Bouterin" in honor of my
father, whom we lost while he was still a young man. Although he
will never see the restaurant, I wish to do him the honor of calling
it by his name.
